Abstract

Chenopodium quinoa, widely known as quinoa, has gained global acclaim due to its remarkable nutritional profile and diverse health benefits. As a pseudocereal, quinoa stands out for its gluten-free, high-quality protein content and its starch-rich endosperm, making it an excellent food choice for individuals with various dietary restrictions. Quinoa seeds are loaded with essential macro and micronutrients, including vital amino acids, dietary fiber, minerals, and antioxidants.
